Very few new places attract as much attention as Lut/Laget. Located in Clemenskvartalet, part of the latest developmment in Bjørvika, Lut/Laget is many things at once: a two-storied French style brasserie (their interior decoration features an Eiffel tower), a bar, a bakery backed by Åpent Bakeri and a pizza restaurant as part of the Lofthus Samvirkelag.

The name Lut/Laget, originally meaning “joint-stock company” in Norwegian, emphasises this multi-faced cooperation between Lofthus Samvirkelag and Åpent Bakeri. But the collaboration behind Lut/Laget goes much deeper. The pastry chef Diana Elizondo used to work at Maaemo, whereas the bistro chef Martin Gnecco is from restaurant Panu—and they are a couple.

Since its opening in March 2024, Lut/Laget has become one of our favourite bakeries. Cosy, mixed with a sense of luxury, the interior decoration features a vintage French style with a Scandinavian twist: checkered floor tiles, wooden furniture, bright seating in the bakery, airy and spacious dinning area with a very intimate bar at the very end.

We tried almost all of their pastries, and were constantly impressed by new findings. Their apricot and elderflower cake features several slices of fresh apricots, immersed in light and airy cream on the top of a very spongy cake body. This is very typical Lut/Laget style: nearly all their pastries have a clear focus on the contrast between different textures, creating a layered foundation. The seasoning is usually very light, relying largely on the ingredients’ high quality to ignite a blast of different tastes.

Their cinnamon buns are also very popular. Light, airy, and extremely tasty, but somehow we feel the bun’s body is slightly too dry. We suspect they did it on purpose, so as to add an extra layer of bouncy crunchiness to the buns.

Despite our frequent visits, we have yet to try out their brasserie as well as their bar. But one thing you absolutely should not miss at Lut/Laget is their bathrooms—especially the ladies’ bathroom. Squeezed between the dinning and bar areas, the bathrooms were elegantly decorated, from wallpapers to lights to the flooring, with attention to every detail. Tea and coffee served here (from Åpent Bakeri, of course) are generally very disappointing, but I am sure you will forgive them once you enter these exquisitely decorated bathrooms. After all, it is how it ends that really matters.
